Apple/Walnut Curried Roast Chicken Salad

Ingredients

  • Left over breast from last nights roasted chicken diced- about 8 to 10 ounces
  • 1 red delicious apple peeled, seeded and diced
  • ½ red or yellow onion diced
  • 1 stalk celery diced
  • ¼ red and ¼ yellow bell pepper diced-for color
  • 1 scallion sliced with green tops
  • ¼ cup walnuts
  • 1 heaping tablespoon sour cream
  • 1-2 heaping tablespoons mayonnaise (adjust as needed if you like dryer)
  • ¼ cup Jamaican curry (adjust to taste)
  • Salt and pepper to taste

Steps

  1. Combine all ingredients except walnuts
  2. Mix and let sit in refrigerator for 30 minutes to meld flavors
  3. Mix in walnuts
  4. Serve on toast or lettuce cup
  5. Makes 2 servings
