Ingredients
- Left over breast from last nights roasted chicken diced- about 8 to 10 ounces
- 1 red delicious apple peeled, seeded and diced
- ½ red or yellow onion diced
- 1 stalk celery diced
- ¼ red and ¼ yellow bell pepper diced-for color
- 1 scallion sliced with green tops
- ¼ cup walnuts
- 1 heaping tablespoon sour cream
- 1-2 heaping tablespoons mayonnaise (adjust as needed if you like dryer)
- ¼ cup Jamaican curry (adjust to taste)
- Salt and pepper to taste
Steps
- Combine all ingredients except walnuts
- Mix and let sit in refrigerator for 30 minutes to meld flavors
- Mix in walnuts
- Serve on toast or lettuce cup
- Makes 2 servings
