Ingredients

  • 1 Egg
  • 1/2 cup milk
  • 1/4 canola or corn oil
  • 1 1/2 cups flour
  • 1/2 cup sugar
  • 2 teaspoons baking powder
  • 1/2 teaspoons salt
  • 1 cup fresh blueberries (or 3/4 cup well drained frozen blueberries (thawed)

Directions

  1. Heat oven to 400 degrees. Grease bottoms of 12 muffin pan, or use muffin paper cup liners.
  2. Beat egg.
  3. Stir in milk and oil.
  4. Mix in remaining ingredients, just until flour is moistened. Batter should be lumpy.
  5. Fold in the blueberries
  6. Fill muffin cups 2/3 full. Bake 20-25 minutes, or until golden brown. Immediately remove from pan. (12 muffins)
