Chicken Sausage Hash and Waffles


4-5 links breakfast chicken sausage-about 6 oz total
1 tablespoon of oil
½ red delicious apple or your favorite apple diced
1 small potato diced
½ red onion diced
½ red or yellow bell pepper diced
Salt and pepper to taste
½ teaspoon red pepper flakes (optional)
2 homemade or frozen waffles
1 tablespoon Maple syrup or honey


  1. Sauté diced breakfast chicken sausage for 5 minutes in oil
  2. In the meantime, microwave potato for 3-4 minutes depending on size
  3. Diced potato and add with the diced apple, onion, pepper to chicken
  4. Sauté an additional 5 minutes until hash is crispy
  5. Season with salt, pepper and red pepper flakes (optional) to taste
  6. Spoon over waffles and enjoy with maple syrup or honey
  7. Makes 2 serving
